Stavroto is the third variety in the renowned PDO Rapsani wine, along with Krassato and Xinomavro, grown exclusively in the feet mount Olympus, the home to the ancient Greek Gods. Like Negoska, it is only found in blends with Xinomavro, whose wild character it can help to tame and round.
Stavroto gives wine a rich red colour while its seemingly rough tannins quickly soften to pass the show to Xinomavro. Stavroto adds spice aromas to the wine and a sense of ease and smoothness while drinking.
Wines with Stavroto age well and go perfectly along with veal liver, red meat and game.
